Ingredients:

Turkey Fillet: 1Kg

A mixture of dried vegies and spices:

(thyme, dried rosemary, dried oregano, brown sugar, garlic powder, onion powder, black pepper, paprika, and mustard seed)

Brine Ingredients:

salt: a quarter of a cup
cold water: 2 cups
black peppercorns: 2 teaspoons
cloves: 2 teaspoons
fresh rosemary: 2 stems
lemon & orange zest: a few pieces

Method:

Mix the brine ingredients in a bowl.
Put the turkey fillets in the brine mixture and let them rest for 12 - 48 hours.
After brining, take the fillets out and dry them.
Mix the fillets with the mixture of dried vegies and spices as mentioned in the ingredients.
Spread a parcment paper on the oven tray, then put the fillets on it.
Apply olive oile on the fillets.
Turn on the oven to 190 degrees Celsius.
Then put the tray of fillets inside the oven and let them cook for about 20 minutes.
Turn the fillets, and let them be cooked for another 20 minutes.
Serve the fillets with a sweet sauce like cherry jam.
